Cottage cheese cookies with cardamom and cinnamon - tender, crumbly, fragrant and very simple. If you put your hand in, it will take less than half an hour to prepare it, and believe me, you will not get tired. I remember cottage cheese triangles from childhood - at home for tea, on a visit to a festive table. In the home-style buffet, the little vase with the delicacy that my grandmother made was always looming, as many people call it - grandmother’s cottage cheese cookies. This is the most popular recipe for home baking lovers - it was and still is.
The secret ingredients are not here, everything is incredibly simple. Cardamom and cinnamon are the available spices, which will give baking a sweet oriental flavor, without them the cookies will be a little boring, but still tasty, crumbly, melting in your mouth.

- 200 g of fat cottage cheese;
- 120 g butter;
- 300 g wheat flour;
- 100 g of fine sugar;
- 10 g ground cinnamon;
- 5-6 boxes of cardamom;
- soda or baking powder.
Method of making cottage cheese cookies with cardamom and cinnamon
Sift the wheat flour into a bowl, add 1/3 tsp of baking soda or baking powder. We crush the boxes of cardamom with a pestle, pour the seeds into a mortar, and grind it into powder. Mix flour with mashed cardamom.
Cut butter into cubes. Add chopped butter in a bowl of flour. Shortcrust dough butter should be cold, so there is no need to get it in advance from the refrigerator, and the dough should be prepared as quickly as possible.
Rub hands with flour and butter to make a sandy crumb.
Next, add a pack of fat cottage cheese. It is important that the curd is fresh, non-acidic. These are all ingredients for the dough for cottage cheese cookies with cardamom and cinnamon. As you can see, they are simple and accessible.
Now knead the dough - powder flour desktop or board, spread the mass, quickly mix, roll into a bun. Put the bun in the bowl, put it in the fridge for 20 minutes and, meanwhile, heat the oven to a temperature of 160-180 degrees Celsius.
Sprinkle flour on the board, roll out the dough with a layer thickness of about 3 to 4 millimeters.
We take a glass made of thin glass with a sharp edge, a circle diameter of + \ - 8 centimeters. Cut a glass circles, collect the remnants (trim) of the dough, roll out again, and cut out more cookies.
Pour into a plate of fine sugar and ground cinnamon, mix.
Put a circle of dough in a plate of sugar, then fold the sugar in half in half, half dipped in sugar with cinnamon again. Again, fold in half with sugar, dipping the top quarter into sugar. The bottom of the cookies in sugar can not be dunked - will burn!
