Spring radish salad with egg and mayonnaise

Radish salad with egg and mayonnaise, which I cooked from Chinese radish. This radish in our stores and on the market is often called Lob radish. However, this is nothing more than a repetition of the name in Russian manners, since the Chinese, the word Lobo (I do not know how to draw hieroglyphs), are used to designate different varieties of radish and radish.

In general, I found on the market a rather wonderful, in my opinion, vegetable weighing about half a kilo. The seller called this product proudly - watermelon radish. Outside, the vegetable is covered with a light green skin, and in the cut was a pink flesh that looks exotic. The rind is not edible, it is easy to clean, the pink flesh is juicy, it tastes very similar to daikon or ordinary radish. Apparently the name “watermelon radish” appeared due to external similarity - outside is green, inside is pink.

It was decided when cooking to focus on the smell and taste of vegetables, and make a traditional radish salad. It turned out very tasty, we didn’t catch any “nutty” notes about which the uncle told in the market, but it was nice to eat a light spring salad in the winter.

Ingredients for unusual radish salad

  • 250 g Chinese Lobo radish;
  • 30 g parsley or cilantro;
  • 2 chicken eggs;
  • 30 g of mayonnaise;
  • black pepper, sea salt.

Wash the watermelon radish with a brush, peel off the skin, cut the vegetable in half or in four.

Apparently my “watermelon” turned out to be strange, the pulp instead of the promised pink color turned out to be white spots, which, however, had no effect on the taste.

Next, rub a radish like a normal radish on a large vegetable grater. The characteristic sharp smell is present in the same volume as that of any radish.

Sprinkle grated radish with sea salt, you can use regular cooking, but I wanted more exotic. Stir, leave for a few minutes to erode the smell.

Chop a small bunch of parsley or cilantro finely, add to a salad bowl.

Fresh chicken eggs boil hard-boiled, cool, cut into small cubes and add to a salad bowl on chopped vegetables. A couple of slices of boiled eggs are left to decorate the dish.

Next, season the salad with mayonnaise and freshly ground black pepper. Salt is not necessary, since we poured the salt at the very beginning.

By the way, for a tasty salad, I advise you to cook homemade mayonnaise, preferably on quail eggs.

Mix the ingredients thoroughly, put them in the fridge for 15 minutes so that the products are soaked in juices.

Before serving, decorate with a slice of egg and a leaf of parsley, pepper.

If the radish or radish turned out to be very bitter, with a sharp unpleasant odor, then this can be corrected. First you need to sprinkle chopped vegetables with salt and put on a sieve or in a colander, leave for 15 minutes to drain the juice. Then rinse thoroughly with cold boiled water. These manipulations can significantly reduce the unpleasant smell and sharp taste.
